Ingredients for 4 persons

  • 1 kg potatoes (crumbly)
  • 1 leek (in half moons)
  • 50 g butter
  • 125 g mung bean sprouts
  • 10 g rocket
  • 1 tbsp mustard

For the plaice fillet

  • 4 pieces of plaice fillet
  • One tray with flour
  • One tray with egg whites
  • One tray with breadcrumbs (panko)

Step 1

Peel the potatoes and cut them into equally sized pieces. Boil them in salted water for 25 minutes.

Step 2

Add the leek for the last 2 minutes. Drain the potatoes and leeks. Add the butter and mash with the potato masher.

Step 3

Add the bean sprouts and rocket and season with pepper, salt and a teaspoon of mustard. For even creamer mashed potatoes, add an extra tablespoon of butter.

Delicious with ,lekkerbekjes’ (plaice fillet).

Breading the plaice fillet:

Take three small trays: 1 filled with flour, 1 with egg whites and 1 with breadcrumbs (panko). First, coat the plaice fillet with the flour. Wipe a little of the excess flour off the plaice fillet and then coat the fish with the egg whites. Slightly drain the plaice fillet and then coat it with the panko. Lightly press the fish into the tray and make sure that the whole fish is covered with panko.  Fry the plaice fillet in plenty of margarine until golden brown.
